The United States is one of only three countries (alongside Liberia and Myanmar) that has not officially adopted the metric system as its standard. While the US did define the metric system as legal for trade in 1866 and officially adopted it in some scientific contexts, everyday cooking remains firmly rooted in the US customary system.
The US customary system evolved from English units brought over by early British colonists. By the time the metric system swept the globe in the 19th and 20th centuries, the US had already industrialized with its own measurement infrastructure, cookbooks, measuring cups, and kitchen tools, making a switch costly and confusing.
In contrast, most other countries adopted the metric system for cooking because it is more precise, easier to scale, and consistent.
The rise of digital kitchen scales and international recipe sharing has made weight-based measurement increasingly popular even among US home bakers. Many professional pastry chefs and serious home cooks now weigh ingredients regardless of which system their country uses.
β Common Recipe Scaling Mistakes
- Confusing fluid ounces with weight ounces. A fluid ounce is a volume of 29.57 mL, but a weight ounce is 28.35 grams. 8 fl oz of water weighs about 8.3 oz, close but not equal. 8 fl oz of honey weighs about 12 oz, a significant difference!
- Assuming "1 cup = 250 mL" is standard everywhere. US cups are 236.6 mL (usually rounded to 240 mL in recipes). UK/Australian "metric cups" are 250 mL. Canadian cups were historically 227 mL. Always check which cup your recipe uses.

- Rounding errors accumulate in scaled recipes.:
- Confusing dry and liquid measuring cups. Dry measuring cups are designed to be filled to the brim and leveled. Liquid measuring cups have a spout and markings below the rim. Using a liquid cup for dry ingredients makes it impossible to level properly.
- Ignoring ingredient temperature. Butter at room temperature vs cold changes its density. Brown sugar packed vs loose can vary by 50% in weight per cup. The recipe writer's assumptions matter.
Metric Conversion Tips for US Recipes
- Memorize the key ratios: 1 cup β 240 mL, 1 tbsp β 15 mL, 1 tsp β 5 mL, 1 oz β 28 g, 1 lb β 454 g.
- For liquids, volume and weight are nearly interchangeable. 1 mL of water weighs 1 g. So 240 mL (1 cup) of water β 240 g. This approximation works for milk, cream, and stock too.
- Oven temperatures: 350Β°F β 175Β°C, 400Β°F β 200Β°C, 450Β°F β 230Β°C. The formula is (Β°F β 32) Γ 5/9 = Β°C.
